Dear friends,

It is with great sadness that we have to write and tell you that our very dear friend Shaver passed away this week. Shaver had been ill for a while with cancer but he was still the same lovely man full of good spirit and humour, he was a rebel to the last. Those of you that met Shaver on our butchery courses will agree what a sad loss this is, he really was one in a million and for us the courses will never be the same again.

Small Holding Courses

Our Pig Butchery Course
The Snout, The Trotters, and In Between

Informative, hands on, one day course, making the most of a whole pig.  Based on Chris’s experiences over the last ten years - starting as a smallholder fattening a couple of pigs each year and using our local butcher to do the processing, through to developing our breeding stock, building our own butchery and making our own pork products. We want to share our ‘Field to Plate’ attitude.

The course will suit individuals wanting to take their own pig keeping to the next stage, processing the carcass into fresh meat cuts that are suitable for your own personal family use or for small commercial ventures from the smallholding, making and linking superb sausage and chorizo, and starting the processes of dry curing and smoking bacon and making your own wet cured and air dried hams.

Gift Cards

If you would like to book the course as a gift for a friend or family member in advance, we will be happy to send a Gift Voucher to an address of your choice for the individual to make their own booking.


The all inclusive cost for the day including lunch is £150.00.  A 20% confirmation fee is required at the time of booking, payable by direct transfer Snout and Trotter. Should you cancel within 7 days of the date of the course you are attending the deposit will be forfeited. Course numbers are limited at a minimum of 4 and a maximum of 10. A minimum child age for the course is 13 and must be accompanied by an adult.

Schools or Corporate Days Out

We welcome any enquiries from larger groups of friends, hen or stag groups, school groups, colleges, or companies who want a day out with a difference. Group discount can be offered.
