On the Farm Courses
The Snout, The Trotters and in between
Hosted by Chris and Jan Jopling, with butchery skills being demonstrated by Shaver Knight, a traditional and experienced butcher (with a passing resemblance to Father Christmas!) Informative one day courses for like minded individuals wanting to take their pig rearing to the next stage.
This is a busy but fun, hands on day, demonstrating the process of butchering a whole pig. The day is based on our own experiences over the last seven years - starting as smallholders fattening a couple of pigs each year and using our local butcher to do the processing , through to developing our herd, building our own butchery and making our own pork products that we sell successfully both locally and around the UK. We want you to experience and enjoy our Field to Plate way of life.
You will be shown how to process the carcass into fresh meat cuts that are suitable for your own personal use or for those wishing to start their own small commercial ventures from their smallholding.
Following a slap up- porcine- lunch, so you can try our fabulous rare breed pork for yourselves, we will get hands on and work through the process of dry curing and smoking your own bacon and the art of making superb sausage.
Course Content
Guests are welcome at the house for a light breakfast from 8.30AM
The courses commence at 9.30 AM sharp. We have ample parking.
The morning will kick off with a guided walk and talk around the farm, meeting the pigs and looking at the aspects of rearing and breeding rare breeds for pork and the process of installing and the cost of a small home butchery.
We will then move on to our session with Shaver on butchering a whole pig from the Snout to the trotters. We will break for lunch at around 1.00pm
Lunch will be a delicious porcine dish– of course- which will give our guests the opportunity chance to taste and compare our fabulous rare breed pork to commercially grown pork. We will have an informal question and answer session during lunch where guests can discuss and ask all the questions they are dying to ask
At 2.00pm following lunch we will move on to Charcuterie. We will cover curing, air-drying, sausage and salami making, curing and smoking bacon and how easy it is to make your own home smoker.
During late afternoon as part of the session on charcuterie we will also sample some delicious pate. pork pies and meat loaf made from our pork.
The day will close at approximately 5pm
Dates for 2010
We will be running the courses on most Fridays throughout 2010. The dates will be dependant upon demand. Please call early with your preferred booking dates and we will do our best to accommodate you.
Cost
The all inclusive cost for the day including light breakfast and lunch is £130.00. A 50% confirmation fee is required at the time of booking, payable by cheque to Snout and Trotter. Should you cancel within 7 days of the date of the course you are attending the deposit will be forfeited.

What to bring.
Each guest will be given a book to take away, containing the course notes covered on the day. This avoids you having to make copious notes.
Good idea to bring an apron – as you will get the chance to do some cutting and sausage making and also bring a jumper or light top as we often cut up outside in a covered butchery area weather permitting.
Please Note
A minimum child age for the course is 12 and they must be accompanied by an adult.
